Baguette Snacks & Sandwiches ~ Feta & Mushroom Crostini

The following amuse-gueule begins a new segment on this blog. By the way, “amuse-gueule” is another word for “appetizer. It is French for “pleasing to the palate.”

This new series of recipes uses a baguette as a starting point and they are easy to whip up in a few minutes. We hope they will add flavorful enjoyment to your table when you entertain guests or when you feel like eating a wholesome snack or adding a classy bite to a meal.

You can substitute Goat Cheese in this recipe. We also hope you improvise in any other way that appeals to your senses at the time.

158 - crostini

Ingredients:

1 fresh baguette
12 oz feta crumble
4 tablespoons olive oil
1 pound baby Portabella, chopped
Pepper or herbs to taste

Instructions:

1- Slice baguette in half, crosswise. Slice each half again. Cut each section in 6 to 8 slices. Set aside.

2- Place Feta in a small oven-proof dish. Bake at 325F for 15 minutes or until golden brown.

3- Remove Feta from oven. Increase oven temp to 350F.

4-  Mix in chopped mushroom. Add pepper and/or herbs to taste. Set aside.

5- Brush both sides of each baguette slice with olive oil.

6- Bake slices on a cookie sheet in 350F oven, for 2 to 3 minutes.

7- Remove slices from oven.

8- Drizzle Feta-mushroom mixture with olive oil and blend. Spoon onto baguette slices. Serve.

Best serving suggestions: Serve along with other appetizers or with a thick, creamy tomato soup. Also quite delicious alongside a few BBQ wings.

Take some bread home: White, Wheat, Maple-Wheat, Rye, Multi-Grain, Honey-Oat, Cinnamon-Raisin and, of course, Baguettes.
